Macaroni and Cheese

1 tbl sp olive oil
2 cups of water
1 cup of elbow noodles
1⁄2 cup of daiya dairy free cheddar cheese
Cook Time 15-20 minutes
1. Bring 2 cups of water and olive oil to a boil
2. Then add elbow noodles
3. Boil noodles until tender
4. Drain water leaving about 1/6 cup of water in the pot or just enough to cover the bottom of the
5. Return pot to a boil add dairy free cheese
6. Stir.
7. Once cheese begins to melt, remove pot from heat and continue to stir (May add more cheese
according to taste)
Makes two servings.
